Large onion (ea)

vegetable broth (cup)
1 & ½ Cup 3 Cups 6 Cups 8 Cups
turmeric (inch) ¼ inch ½ inch 1 inch 1.5 inch
ginger (inch) ¼ inch

salt & pepper to taste
to taste
to taste
to taste
olive oil / ghee / coconut oil 1 tbsp  2 tbsp 2.5 tbsp 3 tbsp

Method
  • Preheat oven 180 degrees celsius.
  • Roughly Chop Butternut, Onion, Sweet Potato and Carrots and add to roasting Tray.  Leave Skin and Seeds on!
  • Coat in fat/oil of choice.
  • Roast for 40mins.
  • Remove from oven.  
  • Remove Onion & Garlic Skin.
  • Add to Pot / Thermomix.
  • Blend.
  • Add broth and cook for 20minutes.
  • In the last 5 mins fine grate in ginger and turmeric.
  • Serve & ENJOY!
