Broccoli & Basil Soup w/ Freeze Dried Goat Cheese Feta

Ingredients

Instant Pot Directions

  • Set To Saute
  • Add some Olive Oil (about 1 tbsp)
  • Saute Onions, Garlic for 3-4 mins
  • Add Broccoli Stems & Potatoes
  • Add Stock/Broth
  • Add Broccoli, Basil,Salt and Pepper
  • Add Lid
  • Pressure Cook High 8 Mins
  • Let Cool
  • Blend With Immersion Blender
  • Serve with a Sprinkle of Goat Feta and Basil 

Thermomix

  • Add some Olive Oil (about 1 tbsp)
  • Cook Onions, Garlic for 3-4 mins on 100o C, for 3 mins, Speed 1
  • Add Broccoli Stems & Potatoes
  • Add Stock/Broth
  • Add Broccoli, Basil, Salt and Pepper
  • Add lid, cook 100o C, for 10 mins, Speed 1
  • Allow to cool.
  • Blend 30sec, working up Speed 9
  • Serve with a Sprinkle of Goat Feta and Basil 

Old School Directions
  • Heat pot on Med Heat
  • Add some Olive Oil (about 1 tbsp)
  • Saute Onions, Garlic for 3-4 mins
  • Add Broccoli Stems & Potatoes
  • Add Stock/Broth
  • Add Broccoli, Basil, Salt and Pepper
  • Bring to the Boil
  • Turn down the heat and Simmer for 15 Min
  • Let Cool
  • Blend With Immersion Blender
  • Serve with a Sprinkle of Goat Feta and Basil
